Little Smokies White Bean “Stoup”

Yes that says ”Stoup” because this soup is somewhat stew like if you will. Very hearty and definitely a stand alone meal with a nice crusty bread or our favorite cornbread 😋

I like making this when I’m going to be home all day in my Dutch oven but it could definitely be done in a crock pot or instant pot.
1 package Lil Smokies sausages
1 box low sodium chicken broth (2/3 cups)
2 stalks celery chopped finely
1/2 large onion, diced
3 large carrots, peeled and sliced or diced
2 tablespoons butter or margarine
1 tablespoon olive oil
salt and pepper to taste but watch salt when using ham hock
ham hock
1-2 bay leaves
salt free garlic herb seasoning to taste
3 cups water
1/2 pound dry white beans, rinsed
1 can fire roasted diced tomatoes
(we love mushrooms so we add sliced fresh baby bellas)
Add butter and oil to bottom of Dutch oven and heat on medium - add sausages and cook and stir until they brown slightly then add in veggies and cook until veggies begin to soften. Add in broth and stir browned bits off bottom of pot. Add in beans, ham hock, canned tomatoes, seasonings and 3 cups of water.
Bring to a boil then turn heat down to low and cover. Simmer on low until beans are soft. Remove ham hock when well cooked and falling off bone. Take meat off bone and return meat to pot. Serve with rice on the side and/or your favorite bread.
