Delish family night dinner with a touch of just right spice🌮🌶
Layers of seasoned ground beef and tortillas bathed in creamy cheese sauce and pico de Gallo inspired mix then blanketed in more cheesey goodness.
1 pkg taco size soft tortillas, sliced in half
1 pound ground beef, browned & drained
Taco seasoning - 1 package
4 oz softened cream cheese
8 oz shredded pepper Jack cheese
1 to 1 1/2 cups milk
1 can Rotel tomatoes, drained
1/2 small red onion diced
chopped pickled jalapeño peppers to taste
juice of one lime
salt and pepper to taste
Cheddar & monterey Jack cheese blend - 2 cups
Prepare beef according to taco seasoning packet then set aside keeping warm.
In small sauce pan add cream cheese and milk and cook on low stirring occasionally till cream cheese is melted and smooth. Add pepee Jack cheese and stir well reducing heat to low. Stir to keep smooth and leave on low heat.
Add tomatoes, onion, jalapeños, lime juice, salt and pepper - mix in small bowl then set aside.
Now you’re ready to start layering.....
In a 13x9 dish place halved tortillas on bottom then add meat mixture, cheese sauce, then pico de Gallo then continue layers for about 2/3 times. Top with cheddar and Jack cheese and bake uncovered at 350 degrees till bubbly and cheeses are nicely melted. Allow to sit for about 10 minutes then slice and serve. Goes great with sliced avocado and sour cream.
