Quick Easy Fruited Chicken Salad


Fresh berries in season make for a delish, cool quick lunch when you use a shortcut for chicken.....canned chicken.....yep, I said canned. Don't run away in fear!! Of course you can use your own yummy roasted leftover chicken or even your fave rotisserie chicken and shred it. BUT don't' knock the good quality canned chicken till you try it!

Quick Fruited Chicken Salad


Using a good quality canned chicken - drain well then using a fork break apart chunks to shred. Add about a tablespoon or so of your favorite mayo (depends on your taste), a green onion diced, strawberries, blueberries or grapes or all of the above if you really want it fruity! If you prefer your chicken salad a bit on the sweet side add a bit of honey or sugar. Salt/Pepper to taste. Serve with more fruit and crackers or on a buttery croissant or some amazing homemade bread. Enjoy!
