Happy Mistakes...Biscuit & Gravy Casserole

Ever make something and forget a major ingredient? I made this recipe the first time for my work family and turned out great. So, last weekend Gracie and I made it at home....house smelled wonderful as it baked in the oven so we were getting our plates out with anxious taste buds. When I pulled it out of the oven it hit me....I left out the 6 eggs!!! HOW ON EARTH DID I MISS THE MAJOR INGREDIENT OF EGGS IN A BREAKFAST CASSEROLE???!! sigh.....🤦‍♀️


But then....inspiration struck!


Make over easy fried eggs to top the casserole on our individual plates! Absolutely delish! Gracie had 2 plates! My breakfast loving little girl! 😘


Here's the real recipe including the 6 eggs 😜

1 pound bulk breakfast sausage (I use Purnell's Old Folks smoked sausage)

1 can refrigerated biscuits (I like Grands)

6 eggs - whisked well w/salt/pepper to taste & about 1/2 C milk or heavy cream

Package of pepper gravy mix prepared according to package

2 Cups Cheddar or favorite cheese blend


Preheat oven to 350 degrees and spray or butter a 13x9 casserole dish. Cook sausage and drain well. Cut biscuits into quarters and put into bottom of the dish. Top biscuits with cooked sausage crumbles then add 1 cup of cheese. Pour beaten eggs over cheese. Pour prepared gravy over eggs and top with remaining cheese. Then bake until eggs are set/fluffy - about 25-30 minutes depending on your oven. Eggs should be set and biscuits browning on edges. Let sit for about 10 minutes for easier serving. Enjoy!
