Pork & Pineapple Tacos w/pickled veggies & lime crema

Bored of the same ole, same ole for Taco Night? These will definitely cure the humdrum 🌮🤗
Not my personal recipe but it's a good one so I gotta share with yall!!

Isn't that a beautiful thing?
Here's the goods...
1-1/2 pounds ground pork
1 large red onion, sliced thin
1 large fresh jalapeno, seeds/veins removed, sliced thinly
2 limes
1 cup sour cream
1 small can or 2 individual cups pineapple tidbits, drained (save that juice for a Tequilla Sunrise) 😜
1 tsp sugar
salt/pepper
2-4 Tablespoons Taco or favorite southwest seasoning
2 cloves garlic minced
Taco size flour tortillas (6-8)
Halve, peel and slice onion into thin slices; Slice jalapeno into thin slices - remove seeds and veins unless you want more heat then leave those in.🌶🔥 Put 1/2 onion slices and all of jalapeno slices into small bowl, add sugar, salt/pepper and squeeze in juice of 1/2 lime - stir well and set aside. Zest 1/2 to 1 whole lime. Put sour cream into bowl, add in as much zest as you like, juice of other lime half, 1-2 tablespoons water, pinch of garlic & salt/pepper to taste. Mix all well and add more lime zest if you want more zing! Keep in frig till ready to serve.
Warm a splash of oil in a large skillet, add in other half of sliced onions, add salt/pepper and cook 4-6 minutes till softened. Add in ground pork and break into nice chunks, then add the taco/southwest seasoning, salt & pepper pineapple tidbits and continue to stir and cook till pork is browned well - about 10-12 minutes.
Heat tortillas in microwave or over heat of gas range for a few seconds. Fill each tortilla with meat/pineapple/onion mixture then add pickled veggies and top with lime crema. We always add sliced or chunked avocado - you could also top with cilantro, cheese, Salsa Verde, etc ENJOY!! 😋😋
