French Onion Chicken with yukon gold dreamy mashed potatoes & roasted carrots
Ever notice how amazing your kitchen smells when you cook onions? This will really get your mouth watering. Good choice for date night too....well you know married date night. But seriously! Caramelized onions, melty cheese on a tender juicy chicken breast along side some of the creamiest, buttery mashed potatoes you've ever put in your mouth and yummy roasted carrots.

French Onion Chicken
For 2 people split 1 large boneless, skinless chicken breast in half lengthwise - salt & pepper and set aside. Slice a large onion into rings and cook in some good olive oil and a bit of butter until softened and starting to brown. Add a couple teaspoons of sugar and some concentrated beef bullion - I like Better than Bullion - maybe a couple teaspoons then continue to cook until onions are caramelized. (I also added sliced button mushrooms because my hubby and I love mushrooms in most everything but that's just us.) Remove the onions from the skillet and set aside. Wipe out skillet and add more olive oil - brown chicken breasts on each side - 4-6 minutes each side. Once chicken is done top with onions & mozzarella cheese - cover pan to allow cheese to melt.
Dreamy mashed potatoes
Yukon golds are amazing but any potato will do (I used about 5 medium potaotes) - peel and cut potatoes then boil until completely soft. Drain potatoes - then mash with half stick butter, a splash of heavy cream and salt/pepper to taste. Sometimes I use a hand mixer to whip potatoes or just use your masher and mix until smooth.
Roasted Carrots
Using large carrots slice into coins, arrange on a baking pan, drizzle with olive oil, salt & pepper. Roast in oven at 400 degrees until carrots are softened and slightly roasty color...Roasty is a word, right?
