Spicy 🌶Sausage Stuffed Peppers w/Couscous

Not your Mama's stuffed peppers.....

I never liked stuffed bellpeppers growing up - you know the traditional groundbeef, meatloaf-ish filling with rice sometimes? Not my thing.....But these slightly to really spicy gems are a whole different thing.


Here we go...this recipe will feed about 4:


4 large bell peppers, washed, tops removed and seeds/veins removed then cut in half

If you dare...1 or 2 small chili peppers, minced finely

1 pound of chicken sausage or other favorite spicy sausage

6 cloves garlic, minced

2-3 Tablespoons tomato paste

2 Tablespoons ketchup

1 Cup dry couscous

2 cups water

Salt/Pepper

2 Tablespoons butter

Olive oil

Pepperjack or other favorite shredded cheese


Preheat oven to 425 degrees. Place bell peppers on baking sheet - drizzle both sides with olive oil and salt/pepper each side then lay peppers face down on baking sheet (skin side up) and bake for about 15-20 minutes or until peppers are tender and slightly roasted. While peppers bake put butter into large skillet and bring to medium heat then add sausage and garlic, and chili peppers if using, stirring often to crumble and brown sausage. Add tomato paste and ketchup, salt/pepper then couscous and stir to coat. Add the 2 cups water and continue to cook/stir until thickened. Turn oven to broil then fill pepper halves with filling then top with cheese. Place under broiler for about 5 minutes or until cheese is bubbly & slightly browned. Let cool slightly before serving - ENJOY!
